A can of San Marzano tomatoes gets added in, then that goes on the back burner for a good 45-minutes. It may sound weird, and it may taste confusing at first, but trust me on this one. It’s made with ground beef and ground lamb (you can use pork instead), that’s been cooked with onion, red wine, thyme, oregano, and the most important: cinnamon.Ĭinnamon will set your dish off and truly give it the nostalgic Pastitsio flavor. The first step is the meat sauce which is the base to our dish. Hopefully you’re feeling it too because this Pastitsio is what I call comfort. I don’t know if it’s because I’m in the middle of our busiest wedding season yet and all I want to do is come home to a bottle glass of wine with a satisfying meal, or because the weather is changing. Crab mac & cheese, chicken Marsala with paparadelle, collard greens, overnight ham, and now Pastitsio. I have been on a comfort food rampage lately. In this recipe we bend the traditional ways a bit by combining together the sauce, meat, and pasta, then layering with bechamel & cheese for a pasta bake kinda like you would baked ziti. It’s baked together to form a lasagna and has a distinct flavor with the help of a little cinnamon. I was introduced to authentic Pastitsio a few months back and have had it bookmarked on Ina Garten’s Make it Ahead cookbook since. Traditionally Pastitsio is a pasta dish layered with meat, tomato sauce, pasta, and a creamy bechamel. If you’re unfamiliar with this Greek dish, you’re in for a treat. ![]() This is an easy meal to prepare weeknights and is also special enough for dinner guests where it could be served with the asparagus cacio e pepe from the vegetable and sides chapter, and from the dessert chapter, an easy chocolate mousse.Pastitsio, it’s what I like to call stick to your ribs-kinda-food. Or as Scott calls it, “take a bite then do ten push-ups…then repeat 20 times.” The dish is served with either rice or couscous. Not only was it delicious and easy but it looked beautiful and smelled heavenly! The thighs are roasted and then nestled in a sauce of onions, leeks, crème fraîche, lemon slices, and fresh thyme sprigs. I started with the “Creamy Chicken Thighs with Lemon and Thyme.” I cook a lot with chicken thighs and I love the combo of lemon with fresh thyme. They all sound delicious and I know I will be making many recipes from this chapter. My favorite chapter is the Family Dinners with ideas for pork, beef, fish and seafood, pasta, ham, sausage, some meatless, and chicken. The Dessert chapter includes tarts, cakes, cupcakes, pies, cookies, and more. Many of the recipes from the Vegetables and Sides chapter are roasted, which is Ina’s favorite method. ![]() I love the Tuscan White Bean Soup, and the lobster sandwiches with avocado. The Light Dinners chapter has a variety of soups, sandwiches, and salads. Go-To-Dinners includes freeze-ahead, make-ahead, and prep-ahead meals, in addition to drink ideas, vegetables and sides, and desserts, all to help complement dinners, if desired, and even breakfast for dinner which I enjoy. I can always find something in one of Ina’s cookbooks. The books are seen around my kitchen often when I am pondering what to make for dinner while noting all I have on hand are some chicken thighs or pork chops in my refrigerator wanting to try something new. I have always enjoyed watching Ina’s cooking shows and having her cookbooks on hand. And of course, her recipes are not difficult but delicious and comforting. Ina has a way of relating to her readers and viewers by being approachable, friendly, caring, and someone who seems like she could be your friend, sister, mother, or grandmother. Ina Garten is said to be America’s most trusted home cook even though she has won a James Beard award and five Emmy awards, not usually won by a home cook. ![]()
